This recipe has been reposted so many times the original author is unknown, but I owe @brianna_lynn_d all the credit for bringing it into my life! I’ve made it at least 2x a week since she originally posted it, and love it for its simplicity. Few ingredients and a tart, simple dressing make it a lunchtime staple and something I never get tired of.
Ingredients
Makes roughly 4 cups of chopped salad
- 2 heads of romaine lettuce, thinly chopped
- 4 scallions, white parts sliced thinly
- Handful of fresh dill
- Block of feta cheese
- ½ cup fresh lemon juice
- ⅓ cup extra virgin olive oil
- Salt and black pepper to taste
Steps
- Add lettuce, scallions, dill, and feta in a large bowl
- Whisk lemon juice, olive oil, and salt and pepper in a bowl, tasting to adjust seasoning as needed
- Add dressing to large bowl and toss to combine
